It is finally Friday. This work week has absolutely draggggged on. I am welcoming the weekend with open arms and an open bottle of Pinot Grigio. If you are feeling a low key, easy recipe on this Friday evening, look no further than this juicy lemony baked chicken. With minimal ingredients and maximum flavors, you cannot go wrong with this one. It is the perfect entrée to whip up after work for the family, or ideal for make-ahead lunches.
We still have tons of lemons leftover from autumn. I wanted a recipe where I could put them to good use. I love lemon-flavored anything but they especially pair well with chicken and seafood. If you are a lemon lover like me, keep scrolling for this delicious baked chicken recipe!
Baked Lemon Chicken Thighs
6 skin-on chicken thighs
2-3 lemons (for juice and garnish)
1 tsp. garlic powder
1 tsp. brown sugar
2 tbsp. olive oil
Salt & pepper
Preheat your oven to 375°. Line a baking sheet with tinfoil or spray with a non-stick cooking spray. In a bowl, combine the garlic powder, brown sugar, salt, pepper, 2 tablespoons or so of olive oil and 1/2 cup of lemon juice. I only needed one and half lemons for the juice and half a lemon for garnish. Our lemons are huge and juicy AF though, so you may need to use a third lemon if you would like to add a garnish as well.
Next, rinse the chicken thighs and pat dry, then toss them in the marinade. Once the chicken is thoroughly coated, place each piece skin-side down on the baking sheet. Add more salt and pepper to the chicken and a few lemon slices for garnish, if desired. Pop the chicken in the oven and baked for 25 minutes. Next, flip each piece of chicken over and continue to bake for an additional 10 minutes or until cooked through.
Mmmm! Crispy on the outside and tender on the inside. The brown sugar helps balance the acidity of the lemon juice giving the chicken the perfect amount of lemony flavor.
