Instant Pot Chicken & Spinach Alfredo

Hi fellow pasta lovers. I am back with another easy, quick and carb-packed meal. As you all know a tad too well, I am all about simple recipes that feed an army…or just my boyfriend and I for a few days. When I offered to make dinner the other night, Mark quickly requested chicken alfredo. Boy loves his pasta. I had never made alfredo before but I knew it was pretty simple to make on the stovetop. But my Instant Pot was sitting there…all alone with no contents inside. Being the (Instant) Pot Head that I am, I caved and had to use him for this recipe. If you want to know how to make this easy, cheesy chicken and spinach alfredo that is ready in 6 minutes (yes girl) then look no further.

Instant Pot Chicken & Spinach Alfredo

2 chicken breasts

2 cups baby spinach

1 pint half and half

8 oz. of shredded parmesan cheese

1 lb. uncooked pasta

4 cups chicken broth

Olive oil

1 small onion, diced

1 tsp. onion powder

1 tsp. garlic powder

1 tsp. oregano

1 tsp. sugar

1/2 tsp. dried basil

1/4 tsp. dried thyme

1/4 tsp. celery salt

Salt and pepper

Let’s do this thang. Turn your Instant Pot to “sauté” and begin heating the olive oil. Season both chicken breasts with salt and pepper and sear both sides until brown. Remove the chicken and set aside. Add the onions into the pot with about 1/2 cup of the chicken broth. Scrape off the bits of stuck on chicken from the pot as the onions cook.

The best part of this dish (next to the cheese, duh) is all the delicious spices. You can use pre-mixed Italian seasoning if you like. I Just felt like experimenting and making my own spice blend!

Once the onions are cooked through, add the remaining chicken broth, half and half, spices, chicken breasts and uncooked pasta. I chose rotini noodles but use whichever noodles you prefer!

Give it all a stir, secure the lid and turn the knob to seal. Change your setting to “manual” and set the pot to high pressure for 6 minutes.

Once complete, turn the knob to vent to do a quick pressure release. Unscrew the lid and remove the chicken breasts. Shred the chicken and add back to the Instant Pot.

Finally, pop in the baby spinach and slowly stir in the parmesan cheese. Mix until the cheese is combined and the spinach is wilted. Serve right away!

This chicken and spinach alfredo is an ideal and easy peasy weeknight meal. Add broccoli, peas or mushrooms instead of spinach, or make it without the chicken for a quick vegetarian meal! You really can’t go wrong with this pasta dish any way you spin it.
