Loaded Potato Bites

Happy Super Bowl Sunday! Whether you are a diehard Patriots or Rams fan, or if you are just here for the commercials like me, you gotta have some delish appetizers and drinks on deck! I took a poll on my Instagram to see if I should whip up a game-worthy cocktail or a quick and crowd-pleasing appetizer. Food won this time and I am so glad it did! It is no secret that I am potato obsessed, so when my boyfriend recommended I make loaded baked potato bites, it took little to no convincing. Keep scrolling to get this super simple recipe that serves a crowd, has plenty of cheese and is eager to please.

Loaded Baked Potato Bites

  • Servings: Makes about 50 bites

2 large russet potatoes

Bacon bits

Shredded cheddar cheese

Sour cream

Olive oil

1 1/2 tsp. onion powder

1 1/2 tsp. garlic powder

1 1/2 tsp. cayenne pepper

1 1/2 tsp. salt

1 tsp. pepper

Preheat your oven to 400° and line a baking sheet with parchment paper. Then, begin slicing your potatoes into thin discs. Place the potato slices into a bowl. Toss them with the olive oil and spices until evenly coated. Place the potatoes on the baking sheet and bake for 20 minutes until crispy.

Next, top the potato bites with cheese and bacon bits and pop back in the oven. Broil on high for 1-2 minutes until the cheese is melted. I left some without bacon since we were going to have some vegetarians at the party.

Once they are done, top them with a dollop of sour cream. You could also add green onions or chives as well!

These were so quick and easy to whip up! Plus, anything with cheese and potatoes is always a hit.
