Are you guys tired of potatoes in all of my recipes yet? Just go with it and embrace them because the world is a much better place with potatoes in it. Another honorable mention is cheese. In this case, our friends Parmesan and Cheddar are making an appearance. But really, cheese and potatoes just pair so well together and they continue their blissful friendship in this recipe: Cheesy Potato Broccoli Chowder. Yes, it is just as tasty as it sounds and no, it is not difficult to make. Ain’t nothin’ requiring effort coming out of my kitchen tonight!
If you like hearty, cheesy, potato-y and easy recipes then this one is for you.
Cheesy Potato Broccoli Chowder
1 yellow onion, diced
1 head of fresh broccoli, chopped
3 large potatoes, chopped
6 cups chicken broth
4 cups whole milk
2 cloves of garlic, minced
1 1/2 cup sharp cheddar cheese
1 cup parmesan cheese
2 tablespoons flour
Salt & pepper
1/2 teaspoon dried thyme
Like the beginning of many great recipes, bust out your Dutch oven and get it hot.
Chop up the onion, potatoes and broccoli, and mince the garlic.
Sauté the onion and garlic with salt and a little butter until the onion is translucent.
Pour in the chicken broth, chopped potatoes, pepper and thyme. Cover and boil for 10 minutes or so until the potatoes are fork tender.
Take the lid off and add in the broccoli and whole milk. Simmer until the broccoli is soft.
Take a potato masher and mash until you get your desired consistency. I like my chowder more on the heartier side, so I left bigger chunks of potato and broccoli.
Toss the cheeses and flour together in a bowl. Whisk the cheese-flour mixture into the pot in small batches until smooth and combined.
Do a taste test and add more salt and pepper as needed.
Enjoy a bowl of this delicious chowder curled up on the couch while you binge watch Kitchen Nightmares on Hulu.
Even though it’s about a 100゚ here right now, that soup looks delicious. Perfect for fall and Winter.
